- 1 cup packed fresh mint leaves, chopped
- 4 scallions, coarsely chopped
- 1 small jalapeno pepper, seeds removed and chopped
- 1 large garlic clove, finely mined
- 1/4 cup fresh lime juice
- 1 tablespoon olive oil
- 2 teaspoons brown sugar
- 1 teaspoon ground cumin
- 1 teaspoon sea salt
- 1 teaspoon freshly ground pepper
Combine all ingredients in a medium bowl and stir gently. Cover and refrigerate.
