Mint Salsa

  • 1 cup packed fresh mint leaves, chopped
  • 4 scallions, coarsely chopped
  • 1 small jalapeno pepper, seeds removed and chopped
  • 1 large garlic clove, finely mined
  • 1/4 cup fresh lime juice
  • 1 tablespoon olive oil
  • 2 teaspoons brown sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon freshly ground pepper

Combine all ingredients in a medium bowl and stir gently.  Cover and refrigerate.
