Chickpea and Feta Relish

Spoon relish atop pita crisps, salads or sandwiches.  Flavors deepen overnight.

Makes 2 1/2 + cups

  • 1 (14 ounce) can chickpeas (garbanzo beans), drained and rinsed
  • ½ cup crumbled feta cheese
  • 1 tablespoon chopped fresh basil
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1 garlic clove, finely minced
  • ½ teaspoon sea salt
  • ½ teaspoon freshly ground pepper

Combine all ingredients in a medium bowl and mix well.  Cover and refrigerate.
